    Bring on Springtime Brunch Dishes

    Welcome back to school Wolverines! I hope everybody had a nice, relaxing break, and that you all are settling into the new semester! With this funky “warmer” weather (warm as a relative term), it may seem like it is time to start exploring some spring time dishes!

    Down below, I have taken the time to provide some of my favorite fun, spring-time brunch dishes! They are sure to impress friends and family. So if you know anyone who likes waffles and omelets, you may be their new best friend…

    Waffle Recipe

    Starting off strong with the waffle recipe!

    Ingredients: 

    • 2 cups flour
    • 1 tsp salt 
    • 4 tsp baking powder
    • 2 tbsp white sugar
    • 2 eggs
    • 1 ½ cups milk
    • ⅓ cup melted butter
    • 1 tsp vanilla extract
    1. Preheat the waffle maker to ~350 degrees.
    2. Mix flour, salt, baking powder, and sugar together.
    3. In another bowl, beat the eggs. Then, stir in the milk, butter, and vanilla.
    4. Combine the flour mixture into wet ingredients.
    5. Cook ~1 cup of batter at a time for 3 minutes.

    This is such an easy, crowd-pleasing recipe that I am sure you will love.

    Spinach and Feta OmeleT Recipe

    Next up, the best omelets you will ever have in your entire life: Spinach and Feta Omelet.

    Ingredients: 

    • 1 cup chopped tomatoes
    • 1 tsp dried oregano
    • 1 tsp salt
    • Black pepper (add however much your soul desires)
    • ½ cup crumbled feta cheese 
    • 8 eggs
    • 8 oz chopped frozen spinach
    • 1 tbsp olive (or avocado) oil

    Heat and spray a pan; mix tomatoes with oregano, salt, pepper, and feta, and whisk eggs with spinach, oregano, salt, and pepper.

    Add oil, cook eggs over medium, gently pushing and tilting the pan until just set, then lower heat and add tomato mixture to half.

    Fold omelet, let sit briefly, cut into wedges, and serve.
